The headcheese turned out very well. The broth/gelatine is a little darker than usual because I leaned into the nutmeg on the spicing. Good even without mustard!

This is still my basic process. This time I omitted adding vinegar and added nutmeg.

I also had stripped the cheek out for guanciale and added a couple extra pig's feet.
